I love baking banana bread, and I always strive to find exciting new variations on the theme. This last version is made spelt flour and has bits of jammy dates worked into the dough. Wholesome and moreish, even more so when slightly toasted and topped with some butter and honey.
Spelt Date Banana Bread
a handful of chopped dried dates
Preheat the oven to 190C/375°F.
In a medium bowl, whisk together all dry ingredients. In a separate, large bowl, whisk all the wet ingredients. Next, mix the dry and wet ingredients and stir until barely combined (try not to over-mix the batter, just make sure the flour has been absorbed completely). Finally, incorporate the walnuts and dates into the batter until well combined.
Transfer the batter to a greased 9-inch loaf tin. Bake for 45 minutes, or until a toothpick inserted in the centre comes out clean. Remove the bread from the oven and allow it to cool completely before slicing.
